Huli Huli Chicken & Sweet Potato Fries

This sweet (not spicy!) Hawaiian-inspired meal is bursting with tropical flavor. It’s easy, kid?friendly, and family-approved!

Ingredients

    Chicken
  • ⅓ cup (75 mL) brown sugar
  • 3 tbsp (45 mL) ketchup
  • 2 tbsp (30 mL) gluten-free soy sauce
  • 1 tbsp (15 mL) Crunchy Garlic Crisp Seasoning Mix
  • 1 piece (1"/2.5 cm) fresh gingerroot, grated (1 tsp/5 mL)
  • 1 can (20 oz./540 mL) pineapple rings in juice, juice reserved
  • 1 tbsp (15 mL) cornstarch
  • 2 lbs (1 kg) boneless skinless chicken thighs
    Sweet Potatoes
  • 2   medium sweet potatoes (about 1½ lbs/680 g)
  • 1 tbsp (15 mL) vegetable oil
  • 1 tsp (5 mL) Crunchy Garlic Crisp Seasoning Mix
  • 3 tbsp (45 mL) mayonnaise
  • 2 tbsp (30 mL) cilantro leaves, chopped

Directions

  1. Combine the sugar, ketchup, soy sauce, seasoning mix, ginger, and 2 tbsp (30 mL) of pineapple juice in a small bowl. Reserve ¼ cup (60 mL) of the sauce and set aside for serving. Add the cornstarch to the remaining sauce in the small bowl and whisk to combine.
  2. Place the chicken in the Small Oven Baking Pan and pour the sauce on top. Nestle the drained pineapple rings with the chicken.
  3. Set the Deluxe Air Fryer & Oven to AIR FRY at 425°F (220°C) for 40 minutes.
  4. Cut the sweet potatoes into small wedges, about 1" (2.5 cm) thick, and place in a large bowl. Toss with the oil and seasoning mix. Place onto a greased Air Fryer Rack.
  5. When the display says, “Add Food,” place the sweet potatoes and the chicken into the oven. Press START. Rotate the pan and rack halfway through cooking.
  6. Whisk the reserved sauce with the mayonnaise until smooth.
  7. Sprinkle cilantro over the chicken and serve the potatoes with the sauce.

Cook's Tips:

Try swapping sweet potatoes for regular potatoes, carrots, or even parsnips for a different texture.

For extra color and flavor, add some sliced bell peppers, zucchini, or red onions with the sweet potatoes.

The chicken, sauce, and pineapple can be prepared ahead of time. Just marinate it in the fridge overnight before baking.
