Cheesy Potato Bites
Creamy cheese, savory bacon and hot, fluffy potato … can you imagine a better bite of food? We can’t, either! And the best part, these come together in under 15 minutes.
- 10 "B" size red potatoes, cut in half crosswise
- Canola oil for brushing
- 3 tbsp (45 mL) mayonnaise
- 3 tbsp (45 mL) sour cream
- 1 cup (250 mL) shredded cheese
- 1 1/2 tbsp (22 mL) Rub

Scoop out a ½”-deep well from potatoes using the scoop end of the Core & More. Arrange potatoes well-side up in Small Ridged Baker and brush with canola oil. Cover with parchment paper and microwave 9 – 12 minutes or until tender. Meanwhile, prepare a filling flavor and topping of your choice. Place the filling into the potatoes using the Small Scoop and microwave, uncovered, on HIGH 1 – 2 minutes more or until melted. Sprinkle with the topping and serve. That’s one bite of pure bliss!
