Caramelized Onion Baked Brie

All the cozy flavor of French onion soup wrapped up in a warm, melty appetizer that’s surprisingly easy to make.

Ingredients

  • 1   medium onion
  • 1 tbsp (15 mL) French Onion Dip Mix or French onion soup mix
  • 3-4 tbsp (30–45 mL) jam, any flavor
  • 2 tbsp (30 mL) water
  • 2 4" (10-cm) round Brie cheese wheels with rind (8 oz./250 g each), room temperature
  •  Optional: Sliced baguette, crostini, sliced apples, or crackers

Directions

  1. Preheat the oven to 425°F (220°C).
  2. Slice the onion on the No. 3 thickness of the Rapid-Prep Mandoline.
  3. Place the onion, oil, and dip mix into the 2-qt. (2-L) Micro-Cooker®. Microwave, covered, for 6–7 minutes, or until the onions are darkened and soft. Stir in the jam and water.
  4. Lightly score the top of each brie wheel in a crisscross pattern, cutting about halfway through. Place them in the Fully Glazed Stone Round Baker. Spread the onion mixture over the brie.
  5. Bake for 15–18 minutes, or until the cheese is soft and the onion topping is bubbling.
  6. Remove from the oven; let it stand for 5 minutes before serving with toasted baguette, crostini, sliced apples, or crackers, if you’d like

Cook's Tips:

Any flavor of jam will work for this recipe, but fig jam (or even leftover cranberry sauce) is especially delicious.
