Sushi Rice
Perfect sushi starts here. This easy microwave sushi rice recipe is quick, foolproof, and great for beginners and families for homemade sushi nights.
Ingredients
- 2 cups (500 mL) short-grain sushi rice
- 3 cups (750 mL) water
- ¼ cup (60 mL) rice vinegar
- ¼ cup (60 mL) sugar
- 1 tsp (5 mL) salt
Directions
- Place the rice in a mesh colander and rinse with cool water until the water runs clear. Transfer the rice to the 3-qt. (3-L) Micro-Cooker® Plus.
- Add the water; cover with the lid and microwave for 12–15 minutes, or until cooked. Let stand, covered, for 10 minutes.
- Combine the remaining ingredients in a small bowl and stir until the sugar and salt are completely dissolved.
- Fluff the rice with a fork and pour the mixture over the rice and gently stir to coat. Let the mixture come to room temperature before using.
Yield:
- 5 cups (1.2 L)

Cook's Tips:
This recipe makes enough rice for 4-5 rolls in the Easy Roll Maker.
To make this in the Deluxe Multi Cooker, rinse the rice as directed in step 1. Place the rice and water in the inner pot. Cook the rice on the WHITE RICE setting for 4 minutes. Let the steam release naturally for 10 minutes, then press CANCEL. Proceed with steps 3–4 as directed.
Make the rice in advance by preparing it through step 2, then let it cool and store it in an airtight container in the refrigerator. When you’re ready to use it, warm the vinegar mixture in the microwave. Microwave the rice for 30 seconds, drizzle with the vinegar mixture, then microwave for another 30 seconds. Gently toss to coat, then cool to room temperature before using the rice to make rolls.
