Chimichurri Potatoes

These perfectly crispy air-fried potatoes are the ultimate side or snack. Serve them with one or both sauces for even more flavor!

Ingredients

    Potatoes
  • 2 lbs. (1 kg) russet potatoes, cut into small wedges
  • 2 tbsp (30 mL) butter, melted
  • 1 tbsp (15 mL) olive oil
  • ¼ cup (60 mL) grated cotija cheese
  • 1 tsp (5 mL) Chimichurri Seasoning Mix
    Chimichurri Sauce
  • 2-3 tbsp (30–45 mL) water
  • 3 tbsp (45 mL) olive oil
  • 1   lime, juiced
  • ½ cup (125 mL) mayonnaise
  • 1   avocado, peeled and pitted
  • 2 tbsp (30 mL) Chimichurri Seasoning Mix
  •  Salt and pepper
    Red Pepper Sauce
  • 1 tbsp (15 mL) hot sauce
  • ¼ cup (60 mL) mayonnaise
  • 1 jar (12 oz./350 g) roasted red peppers, drained
  • 1   garlic clove, peeled
  •  Optional: Cilantro and additional cotija cheese

Directions

  1. Toss the potatoes, butter, oil, cheese, and seasoning in a large bowl. Place the potatoes in a single layer on both trays of the Deluxe Air Fryer and place on the top and middle racks.
  2. Cook on AIR FRY for 22–24 minutes, rotating the trays and flipping the potatoes halfway through.
  3. Meanwhile, choose which sauce to make, or make both!

    • For the chimichurri sauce, add the ingredients in the order listed to the Deluxe Cooking Blender. Set to CUSTOM BLEND at speed 5 for 45 seconds. Remove and set aside.

    • For the red pepper sauce, add the ingredients in the order listed to the Deluxe Cooking Blender. Set to CUSTOM BLEND at speed 5 for 30 seconds. Remove and set aside.

  4. Top with cilantro and cheese, if you’d like, and serve with the sauce of your choice.

Cook's Tips:

If you’re short on time, skip steps 1 and 2, and use frozen potato wedges or french fries and prepare according to package directions.

You can swap the mayonnaise for greek yogurt (low-fat or full-fat) in the sauces for a lighter version.
