Caesar Pasta Salad

What’s better than one classic salad? Two! This recipe will be the hit of any picnic or barbecue—and the best part is how easy it really is.

Ingredients

  • 8 oz. (250 g) dry rotini
  • ½ cup (125 mL) mayonnaise
  • ½ cup (125 mL) Greek yogurt
  • ½ oz. Parmesan cheese, finely grated (¼ cup/60 mL)
  • 1 tbsp (15 mL) Crushed Peppercorn & Garlic Rub
  • 1 tsp (5 mL) Worcestershire sauce (optional)
  • 1 cup (250 mL) arugula
  • 5 oz. (150 g) cherry tomatoes, cut in half
  •  Optional: 1 cup (250 mL) grilled chicken, diced

Directions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions. Drain and let the pasta cool to room temp.
  2. Combine the mayonnaise, yogurt, cheese, rub, and Worcestershire sauce, if using, in a large bowl.
  3. Add the pasta, arugula, and cherry tomatoes to the mayonnaise mixture and toss to combine. Top with the grilled chicken, if using.
  4. Serve immediately or refrigerate for up to 24 hours before serving.

Cook's Tips:

If you’re using chicken, add more flavor by sprinkling 1 lb. (450 g) of chicken breasts with 1 tbsp (15 mL) of Crushed Garlic & Peppercorn Rub before grilling.
