Speedy Zucchini Hashbrowns

 This easy, two-ingredient recipe is a tasty start to the day or a simple lunch.


  • 1   zucchini
  • 2 tbsp (30 mL) finely grated Parmesan cheese


  1. Preheat a greased griddle or nonstick pan to medium heat. Grate zucchini (we used a Veggie Strip Maker), and combine with cheese.

  2. Spread over griddle; press down firmly to pack with turner. Cook 5–6 minutes; flip using two turners. Cook an additional 5–6 minutes or until cooked through and golden brown.
