Creamy Cheddar Cheese Sauce

Ingredients

  • 3 tbsp (45 mL) butter
  • 3 tbsp (45 mL) all-purpose flour
  • 1 3/4 cups (425 mL) milk
  • 1 cup (250 mL) grated sharp cheddar cheese (4 oz/125 g)
  • 1/2 tsp (2 mL) dry mustard
  • 1/2 tsp (2 mL) salt
  • 1/8 tsp (.5 mL) ground cayenne pepper

Directions

  1. In (2-qt./1.9-L) Saucepan, melt butter over medium heat. Add flour; whisk until well blended using Stainless/Silicone Sauce Whisk. Cook 1 minute, whisking constantly (do not allow to brown). Add milk all at once; whisk until smooth. Bring to a simmer, stirring constantly until thickened. Cook an additional 10 minutes, stirring occasionally.

  2. Remove from heat. Add cheese, mustard, salt and cayenne pepper; whisk until smooth.

Yield:

  • 2 cups sauce
      servings of 1/4
