Blue Cheese Burger with Caramelized Onions
Our Crushed Peppercorn & Garlic Rub pairs up with creamy blue cheese and turkey burgers for a unique spin on burger night.
Ingredients
- Caramelized Onion Jam
- 2 tbsp (30 mL) butter
- 1 medium onion, thinly sliced
- ⅛ tsp (0.5 mL) baking soda
- Blue Cheese Spread
- 4 oz. (125 g) blue cheese crumbles
- 2 oz. (60 g) cream cheese, softened
- 3 tbsp (45 mL) milk
- ½ tsp (2 mL) Crushed Peppercorn & Garlic Rub
- Blue Cheese Burgers
- 1 lb (450g) ground turkey
- 1 tbsp (15 mL) Crushed Peppercorn & Garlic Rub
- 1 tbsp (15 mL) mayonnaise
- 1 tbsp (15 mL) butter
- 4 whole wheat burger buns
- 2 cups (500mL) arugula
- Optional topping: 1 large tomato, sliced
Directions
- Add the butter and onions to a small skillet. Cook over medium heat, stirring occasionally, until the butter has softened (about 5–6 minutes).
- Add the baking soda to the onions and reduce the heat to medium-low. Cook for about 5 minutes, stirring occasionally, until the onions are a deep golden-brown color.
- Meanwhile, combine the blue cheese, cream cheese, milk, and rub in a food processor. Blend the mixture until smooth and set aside.
- Combine the ground turkey, rub, and mayonnaise in a large mixing bowl. Then, form 4 patties that are about 4" (10 cm) in diameter.
- Melt the butter in a large skillet or grill pan over medium heat. Cook the patties, flipping halfway through, until they are golden brown, and the temperature reaches 165°F (74°C), about 10–12 minutes. Remove the burgers from the pan and let them rest.
- Return the skillet to low heat. Toast the buns by placing them cut-side down on the skillet.
- Assemble your burgers. Add the blue cheese spread to the bun tops. Then top the burgers with onion jam, arugula, and tomato slices (optional).

Cook's Tips:
Swap Your Spread: Try using a premade pub cheese spread or spinach artichoke dip instead.
Make Substitutions: Use lean ground beef or chicken instead of ground turkey for a different delicious flavor.
Eat Your Greens: Don’t have any arugula on hand? You can use spinach or mixed greens instead.
