Stovetop Butter Chicken & Rice
This butter chicken has all the flavor of takeout without leaving the house.
Ingredients
- Butter Chicken
- 1 tbsp (15 mL) vegetable oil
- 1 onion, diced
- 1½ lbs. (680 g) boneless skinless chicken thighs or breasts, cut into bite-sized pieces
- ½ cup (125 mL) butter (1 stick)
- 1 can (14.5 oz./398 mL) crushed tomatoes
- 1 pkg Butter Chicken Meal Mix
- 1 cup (250 mL) heavy cream
- Indian Rice
- cups (400 mL) water
- 1 pkg Indian-Style Rice Meal Mix
- Optional: 2 tbsp (30 mL) butter, salt and pepper, flatbread
Directions
- Heat the oil in the 4.5-qt (4.3 L) Stainless Steel Saute Pan over medium-high heat for 2-3 minutes.
- Add the onion and cook until softened and lightly golden brown, about 3–4 minutes.
- Add the chicken, butter, tomatoes, and meal mix to the pan. Mix well, bring to a simmer, and cook for 5 minutes.
- Stir in the cream, then reduce the heat to low and simmer for 8–10 minutes, or until the chicken reaches 165°F (74°C).
- Meanwhile for the rice, bring the water for the rice to a boil in the 3-qt. (2.8-L) Stainless Steel Sauce Pan.
- Stir in the rice mix and reduce the heat to low. Cover and simmer for 3 minutes.
- Remove the rice from the heat and let it stand for 8 minutes, covered, before fluffing with a fork.
- Stir in the butter, if you’d like, and season to taste.
- Serve the chicken over the rice and with Flatbread, if you’d like.

Cook's Tips:
Leftover butter chicken? Place 3 small flatbreads on the 12” (30-cm) Metal Pizza Pan. Spread 1/3 cup (75 mL) cooled butter chicken on each flatbread. Top each one with ¼ cup (60 mL) grated mozzarella and a few pieces of shaved red onion. Cook in the Deluxe Air Fryer & Oven on PIZZA for 8 minutes.
