Ingredients
- 1 pkg Shortbread Cookie Mix
- 1 cup (250 mL) butter, softened (2 sticks)
- ½ cup (125 mL) raspberry jam or jam of choice
- Powdered sugar for dusting
Directions
- Preheat the oven to 350 F (175 C).
- Prepare the Shortbread Cookie Mix according to the package directions.
- Roll the dough out onto a lightly floured surface. Cut circles with the smooth edge circle side of the Linzer Cookie Cutter. Use the round scalloped edge to cut a small portion out from each side of the cookie to make the sunken cheeks.
- Use the large circle side of a piping tip to cut out 2 eyes. Use the small circle side to cut out a nose. Then use the wide ribbon tip for the mouth.
- Transfer the cookies to a baking sheet. Cut out additional cookies with the smooth and scalloped circle cutters for the cookie bottom, do not cut facial features on these cookies.
- Bake for 10-12 minutes, or until golden brown on the edges. Cool completely before filling.
- Spoon about 1 tsp (5 mL) of jam onto the flat cookie. Top with the face cookie and sprinkle with powdered sugar.
