Easy Limoncello

This classic Italian after-dinner liqueur is prepared quickly in the microwave with fresh lemons and lemon sorbet.

Ingredients

  • 3   lemons
  • 1 cup (250 mL) citrus-flavored vodka
  • 2/3 cup (150 mL) sugar
  • 1 carton (14 oz) lemon sorbet (1 3/4 cups/425 mL), softened

Directions

  1. Avoiding white pith, lightly peel lemons using Serrated Peeler (see Cook's Tip). Thinly slice lemon zest with Santoku Knife. Place zest, sorbet, vodka and sugar in Large Micro-Cooker®. Microwave, covered, on HIGH 5-–7 minutes or until just starting to simmer (do not boil). Carefully remove from microwave; cool 10 minutes.

  2. Strain limoncello into Small Batter Bowl using (5-in./13-cm) Strainer. Serve over ice in four Dots Martini Glasses.

Yield:

  • about 2 cups (500 mL)
    4  servings of about 1/2

Cook's Tips:

The pith (the white layer of citrus fruits between the flesh and the zest) can be very bitter. Lightly peeling the lemons with the Serrated Peeler will help prevent getting excess pith on the zest.

Regular vodka can be substituted for the citrus-flavored vodka, if desired.

If desired, this recipe can easily be doubled.

To garnish, place a small amount of Lemon Sprinkle on a small plate. Rub rim of glass with lemon wedge to moisten. Dip rim of glass into sprinkle.
