Mom's Apple Noodle Kugel
Kugel is a traditional Jewish side dish. With apples and raisins, our version of this special baked noodle pudding would be equally delicious served for dessert.
Ingredients
- 1 package (8 oz./250 g) cream cheese, softened
- ¼ cup (250 mL) plus 1 tbsp (15 mL) butter or margarine, melted
- 4 eggs
- 1 cup (250 mL) sour cream
- ½ cup (125 mL) milk
- ⅓ cup (75 mL) plus 2 tsp (10 mL) sugar, divided
- ¾ tsp (175 mL) ground cinnamon, divided
- ¼ tsp (60 mL) salt
- 2 medium apples, chopped (2 cups/500 mL)
- 6 oz.(175 g) uncooked medium egg noodles, cooked and drained (about 3 ½ cups/825 mL)
- ½ cup (125 mL) raisins
- 2 cups (500 mL) corn flake cereal
Directions
- Preheat oven to 350°F (175°C).
- Lightly grease bottom of Stone Square Baker with vegetable oil. Place cream cheese in a mixing bowl. Gradually whisk in ¼ cup (60 mL) of the melted butter. Whisk in eggs. Mix in sour cream, milk, ⅓ cup (75 mL) of the sugar, ½ tsp (2 mL) of the cinnamon and salt. Fold in apples, cooked noodles and raisins into cream cheese mixture. Pour into baker.
- Coarsely crush corn flakes in large, resealable plastic bag. Add remaining 1 tbsp (15 mL) melted butter to bag and mix lightly. Sprinkle cereal mixture over noodles. Combine remaining 2 tsp (10 mL) sugar and ¼ tsp (1 mL) cinnamon in Powdered Sugar Shaker. Sprinkle over cereal. Bake 35-40 minutes or until set. Let stand 10 minutes before serving.
