Turkey Vegetable Cobbler
This savory, homestyle dish incorporates fresh vegetables and pre-cooked turkey for a quick and comforting family dinner.
Ingredients
- Turkey & Vegetable Filling
- 2 cups (500 mL) diced cooked turkey or chicken
- 1 cup (250 mL) sliced carrots
- 1/2 cup (125 mL) chopped onion
- 2 cups (500 mL) broccoli florets
- 1 can (10 3/4 ounces or 320 g) 98% fat-free reduced-sodium condensed cream of chicken soup
- 1/2 cup (125 mL) 100% fat-free chicken broth
- 1/2 cup (125 mL) 2% reduced-fat milk
- 1 garlic clove, pressed
- 1/4 teaspoon (1 mL) dried thyme leaves
- 1/8 teaspoon (1 mL) ground black pepper
- Biscuit Topping
- 1 1/4 cups (6 mL) reduced-fat all-purpose baking mix
- 1/2 cup (125 mL) 2% reduced-fat milk
- 1 egg white
Directions
- Preheat the oven to 400°F (205°C). For the turkey and vegetable filling, cut the turkey into ½" (1 cm) cubes. Cut the carrots into ¼" (6 mm) slices. Chop the onion using the Food Chopper. In a 3-qt. Micro-Cooker® Plus, combine the carrots, onion and broccoli. Microwave, covered, on HIGH 2-3 minutes or until crisp-tender; drain.
- Meanwhile, in a large mixing bowl, combine soup, broth, milk, garlic, thyme and black pepper; whisk until blended. Stir in the turkey and vegetable mixture; mix well. Pour into the Stone Round Baker.
- For biscuit topping, in a small mixing bowl combine baking mix, milk and egg white; stir just until dry ingredients are moistened and mixture forms a soft dough. Using a Medium Scoop, drop six scoops of dough over filling. Bake for 30-35 minutes or until the topping is golden brown.
