Creamy Spinach & Marinara Chicken
Ingredients
- 8 oz. (250 g) cream cheese, softened
- 1 pkg Spinach Dip Mix
- 7.5 oz. (212 g) artichoke hearts (1 small jar or ½ can), drained and chopped
- 2.5 oz. (70 g) baby spinach leaves (about 2 cups/500 mL, packed)
- 1½ cups (375 mL) marinara sauce, divided
- 1 can (14.5 oz./411 g) petite diced tomatoes, drained
- 4 chicken breasts (8 oz./250 g each)
- 4 oz. (125 g) mozzarella cheese, grated (1 cup/250 mL)
- 8 oz. (250 g) orzo, cooked
- ¼ cup (60 mL) heavy cream
- 1 oz. (30 g) Parmesan cheese, finely grated (½ cup/125 mL)
- Optional: 1 pkg French-Style Demi-Baguette Mix (prepared)
Directions
- Preheat the oven to 425°F (220°C). Combine the cream cheese, dip mix, and artichokes in a mixing bowl; set aside.
- Add the spinach to the Salad & Berry Spinner. Rinse with water then spin once to clean. Chop the spinach.
- Evenly layer the spinach in the Fully Glazed Stone Rectangular Baker. Pour ¾ cup (175 mL) of the marinara and all of the diced tomatoes over the spinach. Toss to combine. Place the chicken on top.
- Dollop the cream cheese mixture evenly over the chicken and spread. Add the remaining marinara and sprinkle the mozzarella cheese on top.
- Bake, uncovered, for 35–40 minutes, or until the chicken reaches 165°F (74°C).
- Carefully remove the chicken from the baker and set aside. Add the orzo, cream, and Parmesan to the baker. Mix until well combined. Place the chicken back on top. Serve with sliced bread, if you’d like.

Cook's Tips:

You can cook the orzo in the 3-qt. (3-L) Micro-Cooker®. Cover the orzo with water (about 2 cups/500 mL) and microwave, covered, until it’s tender, about 8–12 minutes. Drain before adding to the baker in step 6.
