Asian Chicken Slaw

Ingredients

  • 1 pkg (3 oz/85 g) chicken flavor ramen noodles with seasoning packet
  • 1 1 1/2 in. (4 cm) piece fresh gingerroot, peeled
  • 1   garlic clove
  • 2   limes
  • 1/3 cup (75 mL) canola oil
  • 1 tbsp (15 mL) sugar
  • 1 tbsp (15 mL) reduced-sodium soy sauce
  • 1/4   seedless cucumber
  • 1 bag (12 oz/340 g) broccoli slaw
  • 2 cups (500 mL) diced cooked chicken breast
  • 1 can (11 oz/311 g) mandarin oranges, drained

Directions

  1. While noodles are still in the package, press down on them to crush into small pieces; add noodles to Stainless (6-qt./6-L) Mixing Bowl. For dressing, add seasoning packet to Manual Food Processor.  

  2. Grate ginger with Microplane® Adjustable Fine Grater to measure 1½ tbsp (22 mL); add to processor. Add garlic pressed with Garlic Press. Juice limes with Juicer to measure ¼ cup (50 mL). Add lime juice, oil, sugar and soy sauce to processor; process until well blended. Add to stainless mixing bowl with ramen noodles; mix gently with Small Mix ‘N Scraper®.
     

  3. Thinly slice cucumber with Simple Slicer on #2 setting. Stack slices; cut in half with Utility Knife. Add cucumber, broccoli slaw and chicken to noodle mixture in stainless mixing bowl; mix with Small Mix ‘N Scraper®

  4. Arrange slaw on Bamboo Platter and top with mandarin oranges. Serve with Bamboo Serving Tongs
