Individual Caramel Flans

Ingredients

  • 3/4 cup (175 mL) sugar
  • 1/4 cup (50 mL) water
  • 1 can (14 oz/398 mL) sweetened condensed milk
  • 1 can (12 oz/370 mL) 2% evaporated milk
  • 4   eggs
  • 1   Double-Strength Vanilla

Directions

  1. For caramel mixture, combine sugar and water in Classic Batter Bowl; whisk using Stainless Whisk. Microwave, uncovered, on HIGH 4-8 minutes or until sugar is dissolved and mixture turns golden brown, stirring after each 2-minute interval. Divide caramel mixture evenly among six (1-cup/250-mL) Prep Bowls

  2. In Large Glass Mixing Bowl, whisk condensed milk, evaporated milk, eggs and vanilla until mixture thins out and is well blended. Pour evenly into prep powls over caramel mixture; cover with aluminum foil.  

  3. Fill (12-in./30-cm) Skillet or Executive Stir-Fry Skillet with 4 cups (1 L) water. Cover; bring to a boil over high heat. Remove lid; top with (12-in./30-cm) Steamer Insert. Place prep bowls in Steamer. Cover and reduce to medium-low heat. Cook 25-30 minutes or until centers are still slightly soft. (Flans will continue to set as they cool; do not overcook.)  

  4. Using Chef’s Tongs, remove prep bowls to Stackable Cooling Rack; cool 10 minutes. Refrigerate until chilled, 6 hours to overnight.  

  5. To remove flans, run releasing end of Cake Tester & Releasing Tool around rims of prep bowls and unmold onto serving plates.

Cook's Tips:

You can substitute 2 tsp (10 mL) vanilla for the Double-Strength Vanilla.
