Cake Mix Swirl Cookies

Ingredients

    Cookies
  • 1 tbsp (15 mL) oil for greasing
  • 2   boxes cake mix, any flavor (2 different flavors) (13.25–15.25 oz./ 375–432 g each)
  • ⅔ cup oil (150 mL) divided
  • 4   large eggs, divided
    Glaze
  • 1 cup (250 mL) powdered sugar
  • 2 tbsp (30 mL) water, lemon juice, or milk

Directions

  1. Preheat the oven to 350°F (175°C) and brush two cookie sheets with oil using the Chef’s Silicone Basting Brush.
  2. Combine one of the cake mixes with half (⅓ cup/75 mL) of the oil and 2 of the eggs in a large bowl. Mix until it forms a smooth dough.
  3. In a separate bowl, combine the other cake mix, remaining oil, and the remaining 2 eggs. Mix until it forms a smooth dough.
  4. Gently combine the two doughs together until they make a fun swirl and look like tie-dye. Don’t over mix.
  5. Bake the cookies for 13–15 minutes.
  6. Whisk the glaze ingredients together in a small bowl while the cookies bake.
  7. Paint the glaze onto the cookies while they’re still warm. Let them cool on the cookie sheet for 5 minutes. Move the cookies to a cooling rack to cool completely before eating.
