Sweet Potato Sushi Roll
Sweet potatoes, apple, and avocado bring fall-inspired flavor to a fun veggie roll finished with a sweet drizzle.
Ingredients
- Sauce
- ¼ cup (60 mL) soy sauce
- ¼ cup (60 mL) maple syrup
- ¼ cup (60 mL) mirin
- Sushi Rice
- 2 cups (500 mL) short grain rice, rinsed
- 3 cups (750 mL) water
- ¼ cup (60 mL) rice vinegar
- ¼ cup (60 mL) maple syrup
- 1 tsp (5 mL) salt
- Rolls
- 12-15 frozen sweet potato fries
- Oil for greasing
- ¼ ripe avocado, cut into thin strips
- ¼ apple, cut into julienne strips (see cook’s tip)
- 3 sheets nori seaweed
- ¼ cup (60 mL) French fried onions, finely chopped
Directions
- Add the soy sauce, maple syrup, and mirin to a sauce pan. Bring to a boil and continue boiling until reduced by half, about 4 minutes. Cool completely before using (it will thicken).
- Place the rice and water in the 3-qt. (3-L) Micro-Cooker®. Cover with the lid and microwave for 12–15 minutes, or until cooked. Let stand, covered, for 10 minutes.
- Combine the remaining rice ingredients in a small bowl and stir until the syrup and salt are completely dissolved.
- Fluff the rice with a fork, then pour the mixture over the rice and gently stir to coat. Let the mixture come to room temperature before using.
- Set the Deluxe Air Fryer & Oven to AIR FRY for 15 minutes. Place the sweet potatoes on the Air Fryer Rack. When the display says, “Add Food,” place the pan in the oven and press START.
- Lightly grease the barrel and plunger of the Easy Roll Maker. Fill both sides of the barrel with sushi rice, then press the plunger into both sides to make space for fillings. Add a third of the avocado, apple, and sweet potato evenly along the divots.
- Reattach the plunger, close and latch the barrel, and lock the end cap. Turn the plunger past the threads, then press until you feel resistance.
- Place a sheet of nori (shiny side down) on a cutting board and press the roll onto it, aligning the ends. Roll up the nori and seal the edge with a little water.
- Let it rest a few minutes to soften the nori, then slice into 8–12 pieces. Repeat steps 5 and 6 to make the remaining 2 rolls.
- Drizzle the sliced rolls with the sauce and sprinkle with onions.

Cook's Tips:
Choose an apple that stays crisp and isn’t too watery to balance the sweet potato. Fuji, Gala, or Honeycrisp are great options.
