Spiced Caramel Nuts


  • 1/4 cup (50 mL) butter (1/2 stick)
  • 1/2 cup (125 mL) packed brown sugar
  • 1/4 tsp (1 mL) vanilla extract
  • 1/2 tsp (2 mL) salt
  • 1/2 tsp (2 mL) Cinnamon Plus® Spice Blend or pumpkin pie spice
  • 2 cups (500 mL) pecan halves, walnut halves, whole almonds or whole cashews


  1. Place butter in Classic Batter Bowl or Round Covered Baker. Microwave, uncovered, on HIGH 30-60 seconds or until melted. Stir in brown sugar, vanilla, spice blend, salt and nuts. Mix well. 

  2. Microwave, uncovered, on HIGH 4-5 minutes or until golden brown and mixture appears glossy, stirring every 30 seconds. Spread into a single layer onto Reversible Silicone Baking Mat; cool completely. Store in an airtight container for up to 7 days.

Cook's Tips:

To prepare in the Rockcrok™ (2.5-qt/2.35-L) Everyday Pan, increase the cook time in Step 2 to 5-7 minutes, stirring every minute.

For different flavor varieties, substitute 1 tbsp (15 mL) of curry powder or ¼ tsp (1 mL) cayenne pepper for the spice blend.
