Tangy Oven-Barbecued Chicken
- 1 broiler-fryer chicken (about 4 lb/1.8 kg), cut into quarters
- 1 cup (250 mL) barbecue sauce
- 1/4 cup (50 mL) peach or apricot preserves
- 1 tsp (5 mL) dried thyme
Preheat oven to 350°F (180°C). In medium bowl, combine barbecue sauce, peach preserves and thyme. Place chicken on Large Bar Pan; spoon sauce over chicken.
Bake 1 hour to 1 hour, 15 minutes or until Digital Pocket Thermometer registers 170°F (77°C) in thickest part of breast or 180°F (82°C) in thickest part of thigh portion and juices run clear.
