Broccoli-Cheddar Burgers

These cheesy broccoli burgers with a tangy familiar sauce are simple and satisfying!

Ingredients

    Burgers
  • 1 pkg (12 oz./340 g) broccoli florets
  • 4 oz. (125 g) cheddar cheese, coarsely grated (1 cup/250 mL)
  • 1 oz. (30 g) Parmesan cheese, finely grated (½ cup/125 mL)
  • ¼ cup plus 2 tbsp (90 mL) all-purpose flour (see cook’s tip)
  • 1   egg, beaten
  • ½ tsp (2 mL) garlic powder
  • ¼ tsp (1 mL) salt
  • ¼ tsp (1 mL) black pepper
  • 1  tsp (5 mL) olive oil
  • 4   hamburger buns
  •  Optional: Lettuce, white onion, and beefsteak tomato
    Sauce
  • ¼ cup (60 mL) mayonnaise
  • 2  tbsp (30 mL) ketchup
  • 1 tsp (5 mL) yellow or Dijon mustard
  • 1 tsp (5 mL) dill pickle juice
  •  Optional: 1 dash hot sauce

Directions

  1. In two batches, finely chop the broccoli florets using the Flex+ Food Processor attachment fitted with the multiuse blade, about 5–6 seconds.
  2. Fill the Nonstick Saute & Steam Pan with 2 cups (500 mL) of water. Cover and bring the water to a boil over high heat.
  3. Remove the lid, place the broccoli on top of the steamer and position it over the top of the pan. Cover with the lid, reduce to medium heat, and steam until the broccoli is crisp-tender, about 5–7 minutes.
  4. Turn off the heat. Using oven mitts, remove the lid and steamer from the pot. Transfer the broccoli to a medium bowl to cool for 10 minutes. Drain the water from the pan.
  5. Combine the sauce ingredients in a medium bowl and refrigerate until ready to use.
  6. Add the cheeses, flour, egg, and seasonings to the bowl with the broccoli. Mix until well combined.
  7. Heat the oil in the pan over medium heat for 3–5 minutes. Divide the mixture into 4 patties. Cook the patties until browned, about 3–4 minutes per side.
  8. To assemble the burgers, add the sauce to the top and bottom of each bun, then add the patties and toppings, if you’d like.
