Baked Fish in Foil
These fish packets will take you back to your childhood summers around the grill!
Ingredients
- Baked Tilapia
- 4 tsp (20 mL) oil, plus additional for preparing foil, divided
- ½ lb. (250 g) "B" size red potatoes (about 4), thinly sliced
- 1 lb. (450 g) tilapia fillets, about 1" (2.5 cm) thick
- 1 cup (250 mL) sugar snap peas
- Lemon Sauce
- ¼ cup (60 mL) mayonnaise
- 1 tbsp (15 mL) lemon juice
- ¼ tsp (1 mL) garlic powder
- ¼ tsp (1 mL) dried dill
- Topping
- ½ cup (125 mL) crushed potato chips
- 1 ½ tbsp (22 mL) Salt & Vinegar Seasoning
