Pressure Cooker Chocolate Pudding

This isn’t your run-of-the-mill chocolate pudding. You’ll be amazed how rich and creamy it is.

Ingredients

  • 1½ cups (375 mL) heavy cream
  • ½ cup (125 mL) milk
  • 1 cup (250 mL) semi-sweet or bittersweet chocolate morsels
  • 4   egg yolks
  • 1   egg
  • ⅓ cup (75 mL) granulated sugar
  • 1 tsp (5 mL) vanilla extract
  • ¼ tsp (1 mL) salt
  • 1½ cups (375 mL) water

Directions

  1. Combine the cream, milk, and chocolate morsels in a microwave-safe bowl. Microwave, covered, on HIGH for 2–2½ minutes, stirring every 1 minute, until the chocolate is melted and smooth.
  2. Whisk together the egg yolks, egg, sugar, vanilla, and salt in the Ceramic Pot. Gradually whisk the hot chocolate mixture into the egg mixture. Cover with the stretch‑fit lid.
  3. Add the water to the inner pot of the Deluxe Multi Cooker. Place the wire rack into the inner pot. Place the ceramic pot into the wire cradle and lower onto the wire rack. Lock the lid and select the DESSERT setting. Adjust the time to 38 minutes and press START.
  4. When the timer is up, press CANCEL. Press the steam-release button to manually release the pressure.
  5. Carefully lift the ceramic pot out and remove the stretch-fit lid.* Cool to room temperature. Cover the pudding with plastic wrap and refrigerate for at least 3 hours or overnight.

Safety Tip: * Use oven mitts or grips to remove the ceramic pot from the stainless steel inner pot.

To make individual chocolate pudding cups, mix the ingredients in a large bowl as directed in steps 1 and 2. Evenly divide the mixture into six 1-cup (250-mL) Prep Bowls, then cover them with the 1-cup Stretch-Fit Lids. Add 1 cup (250 mL) of water to the inner pot of the Quick Cooker. Place one Quick Cooker Stackable Steaming Rack into the inner pot and place three bowls onto the rack. Place the second rack on top and place the remaining three bowls onto the rack. Lock the lid, select the DESSERT setting, adjust the time to 15 minutes, and press START. When the timer is up, let the steam release naturally for 10 minutes, then press the steam-release button to release any remaining pressure. Press CANCEL. Let the bowls come to room temperature with the lids on, then refrigerate for 3 hours.
