Pumpkin Pie á la Easy
Entertaining is easier than ever when you bake up this crowd-pleasing pumpkin dessert.
Ingredients
- ⅔ cup (150 mL) all-purpose flour
- ⅓ cup (75 mL) quick or old-fashioned oats
- ¼ cup (60 mL) packed brown sugar
- ¼ cup (60 mL) pecans, chopped
- ⅓ cup (75 mL) butter, melted
- 2 eggs
- 1 can (15 oz./425 g) solid pack pumpkin
- 1 can (14 oz./397 g) sweetened condensed milk (not evaporated milk)
- 2 tsp (10 mL) pumpkin pie spice
- ½ tsp (2 mL) salt
- Optional topping: whipped cream and pecan halves
Directions
- Preheat oven to 325°F (165°C). In mixing bowl combine flour, oats, brown sugar and pecans. Add melted butter and mix well. Press mixture onto bottom of 8" (20-cm) Brilliance Nonstick Square Pan. Bake 15 minutes or until edges begin to brown.
- Meanwhile, lightly beat eggs in a large mixing bowl. Add pumpkin, sweetened condensed milk, pumpkin pie spice and salt; whisk until smooth. Pour over crust. Bake 45-50 minutes or until filling is set and knife inserted in center comes out clean. Let cool at room temperature.
- Garnish with whipped cream using Whipped Cream Maker & Decorator. Garnish with pecan halves, if desired. Refrigerate any leftover pie squares.
