Apple Ring Pancakes

Ingredients

  • 1   Granny Smith apple, peeled
  • 1 cup (250 mL) all-purpose baking mix
  • 1/2 tsp (2 mL) ground cinnamon
  • 1/2 cup (125 mL) milk
  • 1   egg
  • 1 tbsp (15 mL) vegetable oil
  •  Warm maple syrup, butter, powdered sugar or toasted pecans (optional)

Directions

  1. Remove core from apple; slice apple into 1/4-in. (6-mm) slices and set aside. Combine baking mix, cinnamon, milk, egg and oil in bowl; stir just until dry ingredients are moistened (batter will be slightly lumpy).

  2. Lightly spray Double Burner Griddle with vegetable oil using Kitchen Spritzer; heat over medium heat 1-3 minutes or until shimmering.

  3. Arrange eight apple rings on griddle. Starting in center of each apple ring, slowly pour scant 1/4 cup (50 mL) batter over apple ring (use just enough batter to cover each ring).

  4. Cook 1-2 minutes or until pancake is light golden brown. If desired, serve with warm maple syrup, butter, powdered sugar or toasted pecans.
