Chicken Fajita Bites

This perfect two-bite appetizer is a great recipe to demo with the Medium Pizza Stone, 12" (30-cm) Cast Iron Skillet, Deluxe Air Fryer, or Deluxe Electric Grill & Griddle.

Ingredients

  • 3 medium bell peppers, seeded and veins removed
  • 3   green onions, chopped
  • ½ cup (125 mL) fresh cilantro, chopped
  • 4 oz (125 g) mozzarella cheese, grated (1 cup/250 mL), divided
  • 2 cups (500 mL) cooked chicken, finely diced (about 1 large chicken breast)
  • 1⁄3 cup (75 mL) mayonnaise
  • 1   garlic clove
  • 2 tbsp (30 mL) Chili Lime Rub or Southwestern Seasoning Mix, divided
  • ½ cup (125 mL) sour cream or Greek yogurt

Directions

  1. Cut the peppers into quarters. Combine the onions and cilantro in a small bowl. Preheat the oven to 400°F (200°C).
  2. Mix half of the onion mixture with half of the cheese, chicken, mayonnaise, garlic pressed with the Garlic Press, and 1 tbsp (15 mL) of the seasoning in a medium bowl. Blot any excess moisture from the peppers with a paper towel. Spoon the filling evenly onto the pepper wedges. Sprinkle the peppers with the remaining cheese.
  3. Arrange the filled peppers on a Medium Pizza Stone or 12" (30-cm) Cast Iron Skillet. Bake for 6-8 minutes, then broil on high for 2 minutes, or until the cheese is bubbly and browned.
  4. Mix the sour cream into the remaining onion mixture along with the remaining rub. Then, spoon the sour cream mixture over the fajita bites before serving.

Cook's Tips:

Deluxe Grill & Griddle: Set it up with the grill grates in the flat position. Then, select and set it for 10 minutes. You'll hear three beeps when the grill is preheated. Proceed with step 2. Then, arrange the filled peppers on one side of the grill and close the other side so it's hovering over but not touching the cheese. Once the grill is preheated, cook for 10 minutes. Proceed with step 4.

Deluxe Air Fryer: Follow the directions up until step 3. Then, arrange the peppers on the top and middle racks, set to , and cook for 10 minutes, rotating the trays halfway through cooking.

You can substitute the bell peppers with 6 sweet mini peppers. Just slice them in half and remove the seeds.

You can substitute the chicken with 2 cups (500 mL) of black beans that are rinsed and drained.
