Leprechaun Hats

You’ll do a jig when you discover how easy it is to make these leprechaun hats. 

Ingredients

  • 2   cucumbers (1 thin, 1 slightly thicker)
  • 1 pkg (8 oz/250 g) cream cheese
  • 1 tbsp (15 mL) Garlic & Herb Rub
  • 2   carrots, peeled
  • 1   yellow bell pepper

Directions

  1. Cut a thin cucumber into 1½-2"(4-5 cm) pieces. Cut one side on a bias for a little pizazz. Hollow out the bias-cut end and fill with cream cheese mixed with Garlic & Herb Rub.
  2. For the rim, cut slices from a thicker cucumber with the Simple Slicer on the #3 setting; attach with a bit of cream cheese.
  3. Shave a thin piece of carrot with the Vegetable Peeler and wrap around the base of the cucumber, attaching with more cream cheese.
  4. Cut a small square from a yellow bell pepper using Professional Shears and attach over the carrot with more cream cheese.

Yield:

  • 4  servings of 1 hat
